Start your day by learning to surf the waves at Los Cerritos where gentle, rolling waves are perfect for beginners. Todos Santos has a well-deserved reputation as a food lover's paradise, so after working up an appetite at the beach you'll head into town to indulge in Baja California Sur's greatest contribution to world cuisine: the fish taco! Start with a walking tour, followed by an epic taco exploration, taking you to favorite local joints to sample several types of tacos, drawing on the area's bounties from land and sea. The evening features a wonderful Mexican Cooking Class, usually led by chef Iker Algorri, author of Cooking Adventures in Baja California Sur, and chef-in-residence at Los Colibris Casitas. The emphasis is on having as much fun as possible, learning to make the perfect margarita, and memorable Mexican dishes. You'll spend your time kayaking, snorkeling, hiking, swimming with sea lions, stand up paddle boarding, bird watching, and exploring hidden lagoons and desert beaches. On the other hand, maybe you just want to chill, reading in a shaded spot until it's time for sunset margaritas. Espiritu Santo is a magical place. Whales, dolphins, whale sharks, sea turtles, manta rays and plenty of beautiful tropical fish call the surrounding waters home, while a terrific range of bird species including Blue-footed Boobies, Reddish Egrets, Great Blue Herons, and Yellow-footed Gulls frequent the island's skies and shores. The island itself is stunning, with magnificent towering cliffs, spectac lar sandy bays, amazing lava rock formations, and rock art left by the now-extinct Guaycura and Pericu Indians. There's even an endemic ring-tailed cat, the babisuri. It's a remarkable place to explore and whatever surprises the day may hold, you can be sure that it will also include magnificent food and drink, and dinner is usually served under an unpolluted, star-soaked sky. Today you'll travel back to La Paz and one of the most amazing experiences yet - swimming with the largest fish in the world - the whale shark! Whales are mammals and sharks are fish, and at up to 59 feet and 15 tons, you'll be swimming with what is definitely a whale of a shark. The good news is that they are truly gentle giants and are only interested in plankton. After lunch enjoy a walking tour of La Paz with renowned muralist Uli Martinez, turning kaleidoscopic street art into chapters of La Paz's history. A delightful lesson of how public art can bring alive the history and folklore of a town. Tonight's dinner will be at a terrific local restaurant. Breakfast, Lunch and Dinner included. Camp Cecil de la Sierra, the sister property of where you stayed on Espiritu Santo, sits on the property of a local ranching family, who are an integral part of the experience, providing most of the meat, cheese, and produce for the camp, as well as conducting workshops in tortilla making and leather working. Other activities include beautiful hikes, swimming in watering holes maybe even taking in some rock art. Camp Cecil de la Sierra provides a luxurious glamping experience in the Sierra La Laguna Biosphere Reserve of Baja California Sur. Set within a mango and grapefruit grove on a local ranch, the camp features eight 12'x16' walk-in tents, each furnished with real beds, high-quality linens, rugs, bedside tables, fans, yoga mats, and private compost toilet cabañas.
